-4 medium sized russet potatoes - peeled
-1tablespoon butter
-flour (depends but about 3 cups... but sometimes I can use a lot more)

Peel and cut your potatoes into 1 inch cubes, boil until soft(stab with a knife, if knife go in smoothly its done, if there is resistance keep boiling). When done, drain. Throw int he butter and mash up the potatoes. When thoroughly mashed, let sit until it's cool enough to touch with your hands. The slowly add flour and mix together. When it gets more doughy knead the flour in. You want the dough to not be sticky. Then break upt he dough and roll it into thin logs and cut up logs 1/2 inch apart.

In separate pot have boiling water. Place your gnocchi in the boiling water. Wait for them to float up to the top and then keep them there for half a min. Then take them out and put them in a collander. Serve with pasta sauce of choice.

That sounds really good. For some reason it reminded me of these potatoes my grandma gets sometimes that are really small and skinny. I forgot what they're called but they bake really fast and taste great with basil, garlic, and thyme.
